Making an easy weekend brunch special for a small group is easy, especially when you know what to put on the table.

Start with an easy frittata recipe of eggs, fresh veggies and lots of herbs. Add cut up fruit and waffles with real maple syrup. I love Mollie Katzen’s recipes in Sunlight Cafe. She cooks hers as a traditional frittata on the stove top and finishes it off in the oven. However, when I’m making waffles I don’t want to watch the frittata on the stovetop. So I put it in the oven to bake like a quiche. This is my version. [Here’s my Easy Frittata Recipe].

Easy Weekend Frittata Ingredients

  • 2 tablespoons olive oil
  • 2 small zucchini, thinly sliced (can be replaced with 2-4 cups asparagus, broccoli, or any green veggie)
  • 2 cloves minced garlic
  • 8 large eggs
  • 6 scallions, minced
  • 2 handfuls of fresh parsley or spinach
  • fresh ground pepper
  • 1 cup feta cheese
  • Options: fresh peas, tomatoes, nuts, fresh herbs

Directions

  • First, heat the oven to 350 degrees, and pull out your 10″ oven proof skillet. I like to use my great grandmothers iron skillet.
  • Place skillet over medium heat. Drizzle in olive oil. Then, saute the zucchini for 5 minutes until just tender.
  • Add garlic and saute for about 1 minute.
  • Next, break the eggs into a large bowl. Whisk until blended. Add scallions (white and green part), feta cheese, black pepper. (Add optional fresh peas, tomatoes, or herbs here.) Stir the mixture until combined.
  • Pour egg mixture into skillet with veggies. Cook for 2 minutes without stirring.
  • Then, transfer the skillet to heated oven. Bake 25 minutes until it is firmer in center. I like to leave the frittata a little soft in the center to amke sure it isn’t overcooked.
  • Lastly, remove the frittata from the oven. Loosen edges with a knife and slice. Serve hot, warm or room temperature.

Table Setting

The perfect weekend brunch needs a beverage bar! Try Bloody Marys with all the fixings, or Mimosas in champagne flutes with a float of Grand Marnier.

Flowers make everything more beautiful as far as I’m concerned. Tulips are my favorite spring flower. If you can’t find flowers, plunk your herbs in a glass of water like we did here.

Set your easy weekend frittata out on a gorgeous tablescape. Make sure to use beautiful, custom fine china place settings like we did here. Rather than just stacking the dishes for everyone to grab one, we decided to set the table with a pretty place setting, flowers, and cloth napkins.

Having a decorated tablescape is a simple way to make your brunch a little more beautiful. I like to think it lets your guests feel a little more special too.
