Maybe you’re like me and trying to cut back on sugar. Ice cream is my favorite treat, but it’s full of sugar. To soothe my sweet tooth, I make this easy Funky Monkey Ice Cream.

Funky Monkey Ice Cream
INGREDIENTS
- 3 frozen bananas
- 1 fresh banana
- cocoa powder (dark chocolate or milk chocolate)
- 2 dried dates, soaked in boiling water
- 1/4 cup almond butter or peanut butter
- 1/2 teaspoon vanilla extract
- pinch of salt
- chocolate chips
- optional: coconut, nuts, fruit
DIRECTIONS
- Slice the 3 bananas in chunks and freeze overnight.
- Boil about 1/2 cup of water and soak the date for a few minutes. Save date water.
- Put frozen bananas, fresh banana, cocoa powder, salt, dried date in a food processor or blender. Blend until smooth.
- Add the water from the date to reach desired consistency.
- Add chocolate chips and pulse until distributed.
- Sprinkle with nuts or toasted coconut. (The nuts will get soft if you freeze them in the ice cream.)
- Enjoy immediately as soft serve, or freeze to enjoy later.


I can never wait, so I plop a scoop in a lovely teacup to make it extra special. Elevated portion control, right?! These teacups are the perfect size for a touch of dessert.



Then I put the rest in single serving containers and freeze. Haha…..Who am I kidding? I eat it all as soon as it’s done!
